Grilling ribeyes

- Two 1" rid eye steaks

- light amount of salt and pepper
Method
- Set the big green egg to direct cooking without the heat deflector
- preheat egg to really hot I would do around 500
- place on cast iron searing grate and close lid
- cook for 3 minutes each side
- Let sit 5 minutes
Conclusion
I think it came out good. I like indirect better. I do 118 degrees and pull the convector place more wood get the flame raging and then place the steaks back on for a min on each side.
