Gas vs. Charcoal

I only have experience with charcoal grills. However, now that I'm looking to buy my first grill, I thought I'd check out my options between gas and charcoal. Everything I know about gas grills, I learned from Hank Hill. Are you a "taste the meat, not the heat" believer as well? Or does the meat taste better with charcoal? Opinions please.

We use charcoal, woodchips/wood planks and propane (gas). I would say we use gas the least. I think everything taste much better with charcoal (versus gas). I think everything tastes amazing with wood (flavored or not). I kind of walked right around the question!

I like smoking meat with a low and slow cook with wood. Mostly apple is my go to with smoke.
